Mulled Wine!

  1. Make the spice mix:
  • 1 Tbs ground allspice
  • 1 Tbs ground cinnamon
  • 1 Tbs ground nutmeg
  • 1 tsp ground cloves
  • 1 tsp ground coriander
  • 1 tsp ground ginger

You can keep the leftovers in a jar.

  1. Add the zest of a lemon and clementine to 100g of sugar in a pan.
  2. Add 2 tsps of the spice mix.
  3. Add the juice of the lemon and just enough wine to cover the sugar. Campo Viejo rioja works great.
  4. Bring to the boil and simmer for a few minutes.
  5. Add the rest of the bottle, plus the clementine segments.
  6. Add a drop of vanilla extract and a glug of brandy.
  7. Heat slowly with the pan lid on.
  8. Drink. Regret nothing. Make more.
